Some states are shaped by its natural boundries, such as rivers, ie. all states bordering the Mississippi river. Others were set as territories, and as populations grew, states were carved from those territories, usually square in nature, as with many of the midwestern states.

On May 30, 1854, the Kansas-Nebraska Act created the Kansas Territory and the Nebraska Territory, divided by the Parallel 40° North. The territorial capital of Nebraska was Omaha.

The westen border of California is the Pacific ocean. It is shaped that way because the coast is shaped that way.
Following the Treaty of Guadalupe Hidalgo that ended the war, the region was divided between Mexico and the United States; the western territory of Alta California, was to become the U.S. state of California, and the Arizona, Nevada, Colorado and Utah Territories, while the lower region of California, Baja California, remained in the possession of Mexico.

In 1848, the non-native population of California has been estimated to be no more than 15,000. But after gold was discovered, the population burgeoned with U.S. citizens, Europeans, and other immigrants during the great California Gold Rush. In 1850, California was admitted to the United States as a free state (one in which slavery was prohibited).

In general, where states have "wavy" borders, these are based on mountain ranges, or rivers.

Those states that have all straight borders were "drawn up" by the government, breaking up the great plains where there were no other obvious barriers between the geographies.
