i am not sure of the exact type of softshell..i think its asian/japanesse...also some more in depth advice is greatly needed...lol..

if you are not sure of the species, we cannot be sure if it hibernates- but all temperate-zone turtles do.

No.1 no such thing as a japanese soft shell you must be talking about the Asiatic/chinese soft shell turtle , these kind of soft shell species are endemic to south east Asia , they do not hibernate will bask and are extremely aggressive , Chinese soft shell will have an orange plastron(belly) as a hatchling and to cream when adult.

Yes they do. They dig holes in the mud banks, and go into a dormant state. They usually become active in ealy spring again. They spend almost all of their time in the water, but the females will dig a deep nest for her eggs on land about mid summer.
