* there is hard orange stuff and mushy orange stuff. If you can explain both I would appreciate that!

In cooked blue crabs, the hard orange stuff you find in the center of the body is eggs. You can tell if the crab is female because the "flap" on the underside of the female is fan shaped. The males have a pointy underside resembling a "T".

The mushy orange stuff is the hepatopancreas and is not eggs, it's actually the crab's hepatopancreas, glands involved in producing digestive enzymes and is responsible for filtering impurities from the crab's blood. The "mustard" has a strong taste and is eaten by many people who consider it a delicacy but it contains a lot of chemicals since it filters the impurities so if you do eat it, don't eat too much.

The hard orange is eggs. The soft orange, I think are innards.
Green is the liver.
The liver has flavor but don't eat too much of it.
