I am doing a project for work that involves cutting a tankless water heater in half and I need to seal it back together to flush water through it, possibly at a semi high pressure.

I then have to be able to seperate the two parts again without destroying them.

Should I use a gasket or some kind of sealer?

I would use a gasket. Since you are going to be taking it apart again. You can buy rubber gasket material in a sheet and cut it to your shape.

You might try some high grade hvacr silicone,its very tuff and has good adhesion power
