Yes you can use a memory stick in the USB ports to move files between the two computers. However, you say you do not want to copy files to a stick in order to transfer them from one computer to the other. An alternative, since the two machines are not on the same local area network, would be to buy yourself a domain name and upload files to it using ftp software, and then download them on to the other machine. You need to password protect access to the domain for obvious reasons. A big advantage to this is that all the files are backed up on the ISP's server regardless of where you created them so there is no problem about losing them.

If you are talking about your Home PC no record would be created. But if your are talking about a secure office environment ( which i am sure ur talking about) and if they have enabled detailed logging then every event would be logged on the Event Viewer.
In most cases they would confiure the evenlogs to be only read only so that they cannot be deleted.
Go to Control Panel Administrator Tools even Logs and try to delete the logs.
Still need help get back to me with some more details and i will try to help you out

Personal or Work?
It depends on how paranoid the SysAdmin is.
But, YES, your computer *does* track this sort of thing, it's just most people don't know how to access the information. As for erasing the record...if it is a work computer, erasing this sort of information would be an indication of you having performed an act that possibily violated your employement agreement, and the *erasure* is *also* tracked.
Now, if it's a personal computer...why bother.

In a typical configuration the connection of a USB device isn't logged. If the operating system has been secured, there will be increased logging that could track the device connection. If this is a very secure computer, additional software may be installed to limit connectivity or usage of USB devices (based on hardware codes and configured policies).

I'd guess you're talking about a work computer. It's certainly possible that it is set up to log your actions, usually so the log cannot be erased.

Nope, no record
Just make sure you copy them and don't move them so they remain on the PC

It might log the transfer if it's setup to do so, but this is unlikely as is the possibility that someone would check it.
