You are right. Words don't 'speak' nor do they 'say, tell, etc.', It is the person who says or speaks using words.
This is what is called figurative speech, ie when you say something that you don't literally mean to illustrate a point, knowing that the listener will not take it literally.

This sort of thing has been going on for ages in the English language, eg there is an old English saying that goes, 'Actions speak louder than words.|

Also, if you apply logic, we use words to say and speak so in that sense THEY do say and speak.

If you really do want another word,. which is possibly more accurate, you could say, "...more than words can convey..."

I hope this helps.

It is a perfectly good phrase in colloquial English. It is just shortened to be more poetic and personal. The expanded sentence would be something like this:
More than words that I can say,my eyes will show you.
or
More than my words can say, my eyes will show you.

And from the underlying meaning of the message enjoy yourself

The "that I" or the "my" are implied

My guess is that this is a quote from something, perhaps a song. No, words don't talk, but they convey meaning, and that may be perceived as similar to speaking.
