can anyone point me in the right direction, I want to install/build a payment system on a site. I want to show how many quanitys, but once they have all been sold, i need to somehow display either out of stock, or how many there are left.

Paypal is the easiest and cheapest option BUT you should be aware that you will lose a few sales because of it. I have used Paypal for over a year and have lost about 10-20% of my sales because when people get onto the payment page, all you see is the log in box for Paypal. At this stage some people assume they have to have a Paypal account and log out without completing their purchase. It's only by scrolling down, that there is a second option saying "Don't have a Paypal account?" which you can click on to pay by debit or credit card. But either people don't see this or they assume they will still be made to open a paypal account.

I have written to Paypal about this many times but they won't do anything about it.

The other fault is that, if a customer has ever had a paypal account, their system recognises this and they can't they pay by credit/debit card as the system won't let them. If they don't want to use the paypal account or have lost the log in details, Paypal won't let them out.

And the screen that people see is not the same as that shown on Paypal's demo site.

Just thought I should point out this downside because it is so infuriating. Apart from that, it works like a dream and I couldn't be more pleased with it. Bbut this downside does costs me quite a lot in lost revenue.

I haven't found a better alternative yet though so will stick with it for the time being.

Happy may not be happy with PayPal, but it is still the easiest and cheapest way.
The only alternative is to get a merchant account with a bank (i.e. worldpay, uk), but it costs around 600€ to set-up and commissions are high.
In the US, it is easier to get a merchant account than in Europe.
As far as your stock is concerned, you must be using a database and some server-side program (PhP, Perl): just read your current stock, deduct the quantity you sell, update the result. I don't see why this is complex: just + and -!
Happy: why don't you build a page of payment info just before calling PayPal: give them there all the details for payment.

PayPal offers a checkout system. Very good. Google also does something similar
