If you are speaking of local trips, then the major advantage is that students have real exposure to the things they see, and not just theoretical knowledge. Going to a zoo is very different from reading about a zoo. Particularly for low-income students, who may have had limited life experiences, it may awaken their curiosity and reduce their fear of the unknown.

If you are speaking of international programs, what we call study abroad, I feel that the greatest gain is in the reduction of expectations. Most of us are born among certain conditions, and we assume that everyone else has the same approaches and values as we do. It is only in finding ourselves among a large group which do not share our expectations that we realize the potential range of human belief and behavior and recognize the possibilities. When we meet an individual who does not meet our expectations at home, we often assume that person is an anomaly. When we meet an entire nation of people who do not do so, it becomes clear that our way is not the only good one.

Trips and excursions are immensely valuable to students because it brings a subject matter alive. For example, if a student is studying art history, a trip to an art museum can be extremely beneficial and gives the student a chance to experience art first hand.
For history, going to the location of whatever area you are studying allows the student to actually be in the location where history was made and helps them remember those events when they can say to themselves "I've been there and seen that"
When you can engage as many senses as possible in the learning process, it makes the development of the student more meaningful.
