Most cast aluminum cookware has a nonstick coating. The aluminum is there for fast, even heat conduction. If the cooking surface is anodized aluminum, it will sear (and stick) like stainless steel. And, NO, aluminum does not leech into your food in an unhealthy manner. It is perfectly safe.
ALL cookware except copper and cast iron has aluminum.
Stainless steel is a very poor conductor of heat, and so aluminum is added into the core of the stainless. (otherwise, water would take an hour to boil!)
It sounds like you are deciding on a new set. If you want nonstick, hard anodized non stick is certainly the way to go. If you want to cook gourmet, buy stainless. Whichever way you go, heavy is better. The heavier the pan, the more aluminum is in there, and the better and faster it will heat.

Cast aluminum concts heat rapidly and is usually a little thicker tan cheap SS for more even heat distribution. Stailess will stay shiny and you can use more abrasive scrubbers when needed. Not all cookware has Al. Previous post is probably refering to laminated cookware. Some are Al. clad on the bottom and some like my wifes Kitchenaide brand are SS with Al. covered in SS. The thicker the bottom the more even the heat preventing hot spots.

None. Cast aluminum does not heat as quickly or as evenly, looses its luster after a few washings, is harder to clean and has a greater tendency for food to stick.
