Arms and feet crossed indicates a defensive manner, someone guarded and protective of oneself.
Hands on hips can indicate a self-appointed authoritative stance, someone full of self-importance wanting to intimidate another. Wanting to stake their territory. Could also mean someone demanding attention or showing impatience/frustration at a situation.
People who cannot engage in eye contact are afraid of that more personal contact or intimacy, they are afraid of revealing something of themselves and so they shut down by looking away.
Rubbing/scratching of one's nose or ear can indicate lying or deceit. Playing with one's hair can indicate friendly flirtation. Men sitting down with legs wide open can indicate comfort with their masculinity but can also suggest a "look at me", I am all important in lieu of them pounding their chest if you like. Women who seem touchy/feely indicates their comfort with femininity and a "I am cute and I like you" type thinking.

If you went totally by body lanuage, most of us would or will never be involved in a relationship. However if you are interested in this person. Find out what his interests are and get to know him on a personal level. minus the sex. Pay attention to your own feelings and just don't worry wheather or not he likes you. The question is are you willing to get involved with his body language or him as an individual.

Constantly finding a distraction when someone is talking, i.e. looking down at shoes, picking at fingernails, checking for split ends, would lead someone to believe you were not interested in the subject or the speaker. Looking directly at them, maybe resting you hand on your cheek or you chin gives the impression of interest.

Skip the body, just read the eyes, it's all there.
Look for patterns, and similarities.
you can sense the body, but don't let it distract you.
Also, listen to what people aren't saying.
