The only thing I ever learned about was an Indian king or prince conquering other kingdoms within India. I never learned about a united Indian empire that conquered any other kingdoms or states outside of India.

For exactly the reason that you have just described.

You could argue that the concept of India as a unified country never really came about until the various factions united to kick out the British. Even then a significant section of the population was lost in forming Pakistan.

You could use the Ancient Greeks as an analogy. Greece didn't really exist as an entity, the country was full of city states fighting each other and never really came together until they were threatened from outside (eg. the Persians).

Both Greece and India were major civilisations that were, nevertheless, too fractured to become a conquering force outside their own countries.

~I guess Pakistan, Nepal and Afghanistan don't count? Of course, the peak of "Indian" expansion would be during the days of the Mughal Empire, not Indian but Persian.
Read a little about the history of India. Consider Genghis Kahn, Tamerlane, Babur and the British. Then look at a map, preferably one depicting topography. Think China and Persia. By the time India was an independent nation, where do you propose the expansion take place? Most Indian history deals with the conquest and control of the sub-continent by others.

With a little thought and a little reading, the answer is obvious.

I don't think there is a simple answer to this question.
The following encylopedia links might be a great place to start. Especially the right hand column of the last link because it lists so many ruling organizations by date.
