Paper mache!!! then cover it in some kind of material or paint it! Its so much fun! =)

simple a clay mould it into a shape of a heart, make the details paint it red and different colours looking at a pic. and voilla! a 3-D model of a heart.

Your best bet if you're trying to make an actual heart would be different-colored artistic clays that you can just sun-dry. These are easiest to mold and stick together very well when damp (obviously.)

An alternative would be Play-doh which is basically just a kid-friendlier form of artistic clay.

Styrofoam is an easy material to use (easy to cut). Clay is an option too (just bake it to make it harden). And them use tubing for the Veins and Arteries (it could even just be straws).

Lots of good suggestions already...You could also pull the kindergarten trick, and do papier mache over a blown-up balloon.
