Ive only heard of 'Hannibal' and then the new one 'Hannibal Rising' were any of these any good? Hannibal Rising looks really good, do i have to see the first one in order to understand the last one?
And what are they really about?

The movies were made in this order.
Silence of the Lambs
Hannibal
Red Dragon
Hannibal Rising
Allot of people don't know this but the very first Hannibal movie was Manhunter. It was made it the 80's. The star was William Petersen. Hannibal was played by Brian Cox. It was the same basic storyline as "Red Dragon".
The actual order to see these movies would be:
Hannibal Rising
Red Dragon
Silence of the Lambs
Hannibal
This is the way the movies will make the most sense. As for telling you what they are about you should probably just see them. You have already seen Hannibal Rising. The next one is about him getting caught. Silence is about a copycat murderer that Hannibal is asked to help catch. And Hannibal is about him escaping.

But the storyline actually goes in the order of 4, 3, 1 and 2.

These are the movies in the time sequence of the storyline, not the order of the movies as they came out :). You don't really need to see one to understand the other, but it helps.
Out of the ones there, I have not seen Hannibal Rising..but the only two that are really kind of linked together are Red Dragon and Silence of the Lambs. Manhunter was made in I think the 80s, and Red Dragon is a remake of that movie.

Now how to watch
The movies are not made to run together like star wars
Red Dragon can be watched as a stand alone and you will not miss much - it explains some and ties up nicely, Same with Hannibal Rising. Silence of lambs should be seen before Hannibal - movies try to be linked.
but up to you if you handle holes in plot between movies watch in order of life, if time lines are easily ignored watch in order of make - may make more sense and your not trying to fill in plots holes in older movies with knowledge of newer movies.

There was a movie out before Silence of the Lambs called "Manhunter" that was exactly the same as Red Dragon. So technically, there were 5.
It helps if you see the movies in the order that I showed you, but you don't really have to see them. You won't be lost.

The best of the group is Silence of the Lambs. Though they all stand well alone, Hannible relies a bit on SOTL for it's premise. It is a true sequel. Manhunter and Red Dragon are also good, and stand alone well. I have not seen Hannible Rising.
