I am a Jamaican and even I was surprised when we took a trip up to the Blue Mountain. Absolutely wonderful, and not the typical tourist thing. Beautiful and different scenery everywhere. Wonderful food at this place I think is called the Blue mountain Inn and another one I can't remember somewhere up in thehills with a fireplace, patio dining and birdfeers to see some hummingbirds real close. If you like coffee you can stop at one of the coffee estates/ gardens for a tour of the estate and coffee sampling. Also the soldiers training camp and Barracks at Newcastle, a popular hiking destination and overnight camping ground, are great. Great spots to see the sunsets all over kingston. All this can be done in one day with a guide that knows the area well.
Check out Portland, the most beautiful parish in Jamaica. It rains often there but the place is absolutely wonderful for lush vegetation and beaches. Because of its natural attractions, tourism has flourished in the parish but it is not an overdeveloped tourist area so you still get to be a tourist without losing the feel of the "real Jamaica". A different experience. It's the home for many of the truly wealthy of Jamaica and foreign movie stars. It is noted for its fine beaches, such as Frenchman's Cove, Boston, Winifred, and Dragon Bay.You can also hike the Blue Mountain from Portland. The world famous Blue Lagoon is also situated in the parish. It is believed to be the crater of an extinct volcano. The lagoon is an almost landlocked cove with a restaurant strrecting over the lagoon. Even Jamicans are awed by this. Rafting on the Rio Grande River is also a relaxing, scenic experience... especially if you have a date travelling with. Boston Jerk Centre is an area in Portland that is well known for its famous jerked foods, including chicken, fish and pork. Nonsuch Caves are also located in Port Antonio. The caves are part of the Athenry Gardens. Lighted walkways take you through the gardens and down into the caves, which have Arawak Indian drawings. Reach/ Reich Falls is an "undiscovered" gem and so you should be able to get a pretty undistubed day surrounded by nature. For history visit a Maroon town and attend a Maroon festival. The towns were founded by runaway slaves, Jamaica's original freedom fighters.
If you are in the Kingston area check Port Royal for some Pirate History and the Giddy House remant of the eartquake that sank the city. Gloria's "restaurant" is famous for the best fish/ seafood in that area. You could also take a day trip over to Lime Cay. One of the cleanest quietest beaches in Jamaica. When we went there we almost had the whole island to ourselves. Also check out Helshire beach if you have some local friends you can trust to show you the real ropes. Weekends and holidays are extremely crowded. Best escoveith fish and festival in Jamaica bar none. Fish fresh from the sea cooked while you soak up some sun. Schmooze with the local but swim and buy from the peddlars at your own risk.
All these, Portland, Blue Mountain and Kingston are great for a one day trip. But I most strongly reccommend Portland for the beaches and variety of activities. Enjoy your trip.

Dcotors Cove beach is amazing - I'm not sure what its like in tourist season, btu we went in June(rain season), and we happened to go on the sunny day. The water is like nothing else I've seen!
Negril 7mile beach is also wonderful. Quite a few peddlers though, although the beach police do move them on.

Rick's Cafe in Negril is beautiful! Lots of cliffs and beautiful blue water. The food was so so, but lots of fun to sit, drink and enjoy the view. Plus, for tips, you will see cliff jumpers.

Asides from the popular areas you will want to check out Port Antonio and St Mary. We stayed at Golden Eye ( You know the James Bond movie was filmed here) and it is beautiful. Untouched.
