Gas, liquid, solid, plasma, Bose-Einstein Condensate if you mean states of matter. If you accept Körtvélyessy László's theory (quoted by the contributor below) then there are 6 states of matter.

A Bose–Einstein condensate is a state of matter formed by bosons cooled to temperatures very near to absolute zero (0 kelvin or -273.15°C). Under such supercooled conditions, a large fraction of the atoms collapse into the lowest quantum state, at which point quantum effects become apparent on a macroscopic scale.

This state of matter was first predicted as a consequence of quantum mechanics by Albert Einstein, building upon the work of Satyendra Nath Bose in 1925, hence the name. Seventy years later, the first such condensate was produced by Eric Cornell and Carl Wieman in 1995 at the University of Colorado at Boulder NIST-JILA lab, using a gas of rubidium atoms cooled to 170 nanokelvin (nK). Cornell, Wieman and Wolfgang Ketterle at MIT were awarded the 2001 Nobel Prize in Physics in Stockholm, Sweden.

HOWEVER

If you mean nation-states there are over 200 and one problem is that they are not all recognised by every other country as independent states, Is Tibet still a state now it has been annexed by the People's Republic of China. for example?

AND

If you mean states in the sense that there are 50 states in the United States of America, then you need to come up with some definitions of how self-governing a smaller section of a country in a federal country has to be to qualify as a state in this sense.

Would Swiss Cantons qualify?
English counties?
Principalities and provinces?
Autonomous Regions?

Would the separate states that Bismarck unified to form Germany all count? (Bavaria? Prussia etc)

You see the problem? Personally I would say that the various states that comprise India, like Utter Pradesh are separate states and should count but the four parts of Pakistan are not as self-governing and should not count.

But then what do you say about Kashmir? India-contolled Kashmir is a state and Pakistan-controlled Kashmir is not a state? It gets very problematical very quickly ...
