What I would like to do is pump milk - put it in the refridgerator - then at the end of the day put it in the freezer for when I go back to work. Is this okay? Everything I have read shows to freeze milk to put it into the freezer right away.

(The reason I want to do it at the end of the day is in case I need to give some to my son)

I was only able to pump 2 oz. at a time...I kept the 2 oz in bag in the fridge...would pump 3 times each day and add to the bag until I had a full bag, then freeze at night. Remember to just defrost bags in a cup of warm water, not in microwave. It worked out just fine for my daughter....I also dated them so I would defrost the oldest ones first.

That's fine. Breast milk is fine in the fridge for the better part of a week. If you want to pour it all together and save it in whole feedings that's fine. Once your son has had a drink out of the bottle though, the milk has to be discarded, the digestive chemicals in the saliva can make milk bad quickly.
You shouldn't need to give your son any expressed milk during the day, pump after nursing from here on out to have a stock pile for when you go to work and give your boy the boob during the day and whenever you get the chance. Pumping is hopelessly less efficient than nursing so the more your son nurses, the better luck you will have with pumping. Good luck.

I did this all the time. They say 3-5 days in the fridge (some say up to 7 days) and then 3 months in the freezer.

I broke all the rules with my kids. I'd go 7 days in the fridge, or maybe 5 days and then to the freezer. I'd also mix pumping sessions into one bottle (all the pumpings for one day in one bottle). However, others will tell you not to do this, so you probably shouldn't. Anyway, to put it in the fridge for the day and then on to the freezer is totally OK. In fact, this is what you'd do when you go back to work (pump at work, put it in the fridge or in an ice pack, then to the freezer when you get home).

That's fine. I'm pretty sure refrigerated breast milk can stay in the fridge for 5 days - then you either need to use it, freeze it, or throw it out.

It's fine. I used to do this all the time, as long as you get it into refrigeration after you bag it, it will be fine to freeze it at the end of the day.

I would freeze it right away and if your boy gets hungry give him the nipple.
