I would like to create something similier to this:

I understand in general how it is made. My question mainly is focused on how I could do the parts that seem difficult. Is there anywhere I could get a pattern or other help on a project like this?

I have been trying to figure out sizes and pieces. I want to make a reasonably small one to start with just to conserve resources.

The plan is:
1 6" body piece
2 1.5" top triangle fin pieces
6 14" tentacles
2 17" tentacles with the spade end
2 1" eyes
2 1.25" outer eyes
2 tentacle pads measured to fit.

Am I missing anything? Any sizes seem off? I'm basing them off of the picture on the site, which shows longer tentacles than body size.

That would be a very easy pattern to draw. it's just a modified windsock.

Buy 6 yards of vellux, fleece, or quarter inch foam. Fold it in half, right sides together, so that it's 3 yards long. Draw the shape that you see in the picture, 7 feet long. Draw the triangle fins on the leftover fabric. Cut the squid and fins out of both thicknesses.Pull the big pieces apart just enough to slide the triangles inside. Sew the edges but not the tentacles. Turn it right side out, make long cuts for the tentacles, and draw the eyes with a laundry marker or fabric paints.

Editing - I am kind of surprised at what you added on to your question after you read this answer. You have too many pieces in your cut list. The head, body and tentacles are all one piece cut twice, and then you just need 2 triangles for fins. The eyes are drawn.

It looks pretty easy. All you need is some poly fleece. You could cut the tentacles zig-zaggy one next to each other. Make a pattern on brown paper.
