Both, it depends on exactly what dish I'm cooking. For instance, boneless, skinless breasts are great for grilling, but if I'm making homemade chicken soup or chicken and dumplings, a whole hen must be used. You discard the bones after cooking, but save the meat you pulled off and the broth for the soup or dumplings.

I buy chicken with bones (because it's juicier and tastier that way). I buy steak without bones, usually. Though sometimes I will get a hankering for a t-bone.
