It's like learning to ride a unicycle...then learning to ride a unicycle blindfolded. People can walk straight with closed eyes if they practice, but generally everyone learns to walk and usually walks with their eyes open.

We have a lot of practice learning how to walk, but we don't practice walking straight with our eyes closed (or in the dark) very much. Although motion throws off our balance a bit (the liquid in our ears sloshes around) we can adjust for it. Blind people can walk in straight lines if they want to because that's how they learn and they are able to compensate for not being able to see to orient themselves.

Edit - Just look at a little kid walk, and see how long it takes them to learn to walk in a straight line with their eyes open. It's just practice and concentration...after a while it just becomes natural.
