How long can I keep it?

In addition to the lemon juice I also cover with Saran wrap with the plastic right down on the guac. It is oxidation that is causing the browning. Keep the oxygen off or keep the top acid (lemon juice or lime juice).

I wouldn't keep it more than a few days 3-4 .

Put in a little lemon juice or if no lemons a tiny bit of vinegar. You can keep it for a few days, I'm not sure it never lasts long enough at my house to go bad.
