There are many types of different schools. Some of them specialize in teaching children, most of them are not full time schools for obvious reasons like children need to go to regular school. There are full time schools where people continue learning to become professional dancers or choreographers or other dance related professions. There are part time schools for adults too. The variety is very broad, it's hard to list all types of schools that's out there.

Some people dance full time, they don't have or never had any other job. Some people have part-time dancing career, a good example would be a salsa or a ballroom teacher who teaches only in the evenings. One doesn't have to start young to become a salsa or a social ballroom teacher, it it pretty low key dance related job. You can start as late as 30 and have tons of fun and a little bit of money on the side.

If you're not sure if you can make it as a professional dancer, but still want to try it, I'd recommend attending some dance classes in the style that interests you at your local studio. See how it goes and what can you do with it.
