And you are surprised by this. we already have a city in a state, ( Denver, CO ) that has banned a couple from smoking in their own home. What next, are they going to tell us what color sheets to put on and on what day? Govt is no longer afraid of its people and it should not be that way.

A lot of these restrictions have to do with how we view our relationship with our country. We live in a country because the establishment of government has benefits; our protection (both physical and legal), social services, roads, etc. Along with those benefits come obligations that we have to our fellow citizens that help protect their rights as much as we would like to protect ours.
An easy phrase to describe the basic philosophy of our country and it's foundation of freedom is the saying that 'we have the right to perform any action as long as it does not infringe upon anothers rights'
Now, I am not saying that everything our country does is legit and always follows this philisophical ideal. But since you used some examples, I'm going to try and provide a couple answers based on this philosophy, and sort of answer the way that our government would answer. Again, I'm not saying I agree with all of these arguments (because I don't with a couple of them) but this is the best answer to your question that I can come up with!
Seat belts - You have the freedom to choose to provide, or not provide, safety for yourself within your life. When you, however, neglect simple safety precautions that, when hurt, many of the medical proceedings are payed by tax payer dollars, that is infringing upon other people's rights to expect a financially responsible government. It's kind of an effort vs. cost argument: you not wearing your seatbelt, and the injury's that you can endure because of that, are costing other citizens tax dollars. Now, cynical argument says that maybe it's just an easy way for police to pull you over and make money. Or maybe it's a way to get special interest groups off the governments back. who knows?
Trans fat - Most of the trans fat laws aren't about the amount of trans fat, but about the honesty of the companies about the amount of trans fat, and their obligations to share that information with their customers. I honestly have no problem with that; I want to know what I'm eating!
Smoking - Comes down to the basic argument that you're freedom to smoke infringes on other people's right to have a clean breathing environment. I agree with this to some extent; it could be argued that we're going to the other extreme on this for the sake of image, etc, but again, that's debatable.

What do you mean ... Becoming! We are and have been a "Nanny state" for several years now. Just think about all the "WE WILL PROTECT YOU" laws on the books right now and more are ............ Ooooops, I'm busted; yes Nanny Bush I know I'm wasting valuable time and Internet resources, I'm sorry I won't say anything bad about you again, I'll eat my Brussels sprouts and spinach right now and don't worry, I'll wear my helmet while walking fast and put out my cigar that you outlawed ownership of and I'll throw away that nasty fast food hamburger and fries, I won't even give it to the dog and I'll get rid of this bad bad tequila drink cause it's made with alcohol and is bad for me.

First they take away the guns, then the right to congregate, the right to speech! , the take over of the schools by the commies , the homosexuals , the atheist , and finally the searches , the spying , the drastic lies to make us afraid , and here we will seee CHILE< the biggest nazi -dictatorial country this side of the ocean!!! Ok, well, smoke bothers me, so I am happy people are not allowed to smoke in restaurants anymore. Why do people want to smoke anyway? Do they have a death wish? Trans fat in foods? Well, I do believe that it is not very healthful to eat trans fat. So what is the problem? Travel restrictions? You don't like your luggage being checked or what? Do you remember 9-11? They have to be careful. I for one am thankful they are watching out for us. Seat belts? Why would you not want to wear your seat belt? They have been proven to save lives. So you basically are saying you want to be free to ruin your health or kill yourself. I guess you're not too bright, are you?

Personally I've got to agree with John S on this one.
But to those who want to blame republicans; Ask yourself where did all of these initiatives start? San Francisco. Its democrats who have historically "known whats best for you." Those mean uncaring republicans have always touted "personal accountability" Some of you will blame republicans for anything. To be fair, republicans track record on "helping the poor" has been, well, poor. Again, its "personal accountability" vs "Let us decide what's best for you" You can't have it both ways.

Yes, and its not just the democrats and republicans. Its mostly due to organizations like MADD and such. They apply pressure to the politicians and what we get are knee jerk reactions to political threats.
