From your list, I'd say Nick Mondo and Sabu, due to their "all or nothing" styles of wrestling. However, pretty much everybody from Japan actually did anything with it. The Rottens and New Jack are more so "hit them in the head and pin them" kind of hardcore wrestlers, whereas people like Hayabusa and Gannosuke knew how to actually wrestle, let alone wrestle in an ultraviolent fashion.

Sabu! he jumps off freaking buildings and can probably fly too. He is amazing I can't get over the fact that he ain't in the WWE no more its annoying after Terry Funk he is the greatest hardcore wrestler of all time.

From your list I would choose Sabu, probably because hes most notarized for the wreckless style, New JAcks more for weapon usage
Paul Hyeman gets honorable mention for bringing it to national attention

idk but mick Foley is king of the deathmatch, paul heyman created ECW, sabu is homicidal, suicidal, genocidal, death-defying. and dont forget new jack almost killed a guy by blading him to thick. as 4 rest, idk them
