The oven is supposed to be self cleaning, but I don't want to do it that way because I don't have the manual. It's an old Kenmore and I don't know the model number. Can I used Easy-off oven cleaner and do it the old fashioned way?

While you will ruin the finish, it can be cleaned the old fashioned way. But you will never be able to "self clean" properly again. You will ALWAYS have to do it the "old fashioned way" from then on.

You don't mention whether this is a gas or electric oven, they are different. If it's gas, self cleaning, then the interior surface of the oven is a porous material that is supposed to just allow stains and smudges to slough off of their own accord, and cannot be cleaned with a conventional type oven cleaning material, without removing a lot of the oven coating. If it 's an electric unit, then you should be able to clean it with an oven cleaner made for smooth ceramic surfaces.

never Cleon a self cleaning oven the old fashioned way. The finish is completely different, and you will just end up ruining the interior
