I have to tell my future teacher about me. Now, how do I start the letter?

Dear ,

I don't want to use something like "Future Teacher" or something like that because i sounds weird.

Dear Sir or Madam is an accepted greeting. It's courteous and pretty much the best you can do where the person's name and title are unknown.

Is she a professor? You could say "Dear Professor,".

How do you know that she's a woman, but you don't know her name? Is it someone specific, or a general letter of introduction? For what level of education (high school, college, postgrad, etc.)?

Dear you!,

No I'm kidding :)

Dear wonderful educator,
Dear Mr/Ms/Mrs

or you could just go to your school counselor and ask her?
