Mathieu Joseph Bonaventure Orfila (Catalan Mateu Josep Bonaventura Orfila i Rotger) (April 24, 1787 – March 12, 1853) was a Spanish-born French toxicologist and chemist, the founder of the science of toxicology.

However, Theophrastus Phillipus Auroleus Bombastus von Hohenheim (1493 - 1541) (also referred to as Paracelsus, from his belief that he was above or beyond the work of Celsus - the Roman physician from the first century) is widely regarded as "the father" of toxicology. He is credited with the classic toxicology soundbite "All things are poison and nothing is without poison; only the dose makes a thing a poison." The original German reads: "Alle Dinge sind Gift und nichts ist ohne Gift; allein die Dosis macht, dass ein Ding kein Gift ist." This is often condensed to "The dose makes the poison".

Paracelsus (11 November or 17 December 1493 in Einsiedeln, Switzerland - 24 September 1541) was an alchemist, physician, astrologer, and general occultist. Born Phillip von Hohenheim, he later took up the name Philippus Theophrastus Aureolus Bombastus von Hohenheim, and still later took the title Paracelsus, meaning "equal to or greater than Celsus", a Roman encyclopedist from the first century known for his tract on medicine.

Mathieu Joseph Bonaventure Orfila, and perhaps you could consider Theophrastus Phillipus Auroleus Bombastus von Hohenheim a scientist who studied toxicology. Orfila is credited as the "inventor" of toxicology.
