the reason they have alock is because in case of a robery they could lock the doors so the theft can't get out

So if there is an emergency, the store can be locked. Like if the employee that is on duty has to leave.
Also, they lock the doors if there is only one employee and they go to the restroom or if they need to stock the cooler.

in case it needs renovation or it needs to be closed for unavoidable circumstances plus commercial doors are always designed to have locks on 'em.
