I would definitely take a look at the Suburu Forester or Suburu Outback. We own a 2001 Outback Limited H4 and it is great! This is our second one (our first one was totalled but no one was injured thanks to Suburu's safety engineering). Great gas mileage and descent acceleration although the AWD system with the automatic blunts it a little bit, but thats ok because we go up in the snow all the time and we never have to wear chains! Make sure you get the heated leather seats, those are the best.

Nissan X-Trail is a good little off road vehicle and is pretty economical, as i am a nissan owner i tend to be a bit bias toward them but to be fair honda CRV is just as good, the only thing i don't like about honda is th price tag when things go wrong.
Earlier models of subaru suffered with pourous heads and would over heat very easily though i think that subaru have got over this problem, my next doon neighbour owns 2 of them and says they are fun little vehicals to own, I have never owned one so i can't coment from personal experience, though i can coment from a maintainance point of view, they seem to be a very reliable car, Servicing is reasonably priced and the parts are not that expensive.

go with a scion xb, better gas mileage, and a lot of room. only thing it lacks is the acceleration.
