Is it speed, entertainment (musicians, lady at the podium, drink server) seating, or what? I have beat all the other levels but I can't get more than about 10,000 points on the last level and you need 12,000 to win. What am I doing wrong? Tips would be very helpful. Thanks!

I beat the game, a few tips that helped me meet the levels:
+Do everything in chains
+Color cordinate
+Make customers as happy as possible (Drinks between chains)
+Have the woman speak to the people waiting midway through, it really helps
