Gun powder was first invented in China, over a thousand years ago, but they used it for fireworks. It wasn't until many centuries later that western man discovered gunpowder and made it into a weapon. Since gunpowder is so common, it's hard to credit any one person with the dubious fame of having been shot by the first gun.
If asked to place a bet, I'd put my money on some hapless Chinaman who had a work-related accident.

gun powder was used in cannons before being used in muskets or pistols. do you need to clarify the type of gun, or is the first person killed by a cannon adequate?
