Lord of the Rings. The scenery, the epic battles, the beauty and the horror. The soundtrack was awesome. Just the fact that they could make John Rhys-Davies look like a believable Dwarf!

The last one like that was "Sublime." Couldn't stop thinking about it for almost 2 weeks.
Edit:
Also, "Chicago", "The Others", "Rest Stop" , "Oh, Brother", "Jurasic Park", "Twister", "Fried Green Tomatos" , "The Color Purple", "The Magdalene Sisters", "Gorillas in the Mist", "Mississippi Burning", "Judgment Night"
(I'm not saying all these movies are outstanding productions, but they all stuck with me for a while)

The movie that really left me awed was THE MACHINIST - seeing Christian Bale in ribs and bones has left an indelible impression on my mind.
