Depends a little on what your looking for from your DT's
Sapp (OAK)is great all around
Wilfolk (NE)is very good against the run and average pass
*forgot the two studs in Jac and Harris in Chi
For the most part teams don't count on their DT to do much except take up blockers and stop the run. By taking up blockers DE and LBs get to run free to make the plays!
Just ask Ray Lewis in Baltimore, they had huge dudes at DT that could barely move, but it took two guys to block them and Lewis could persue like a madman!

Sounds like your playing fantasy football with IDP. Check in June or July for fantasy football magazines at book stores. They tell you alot.
