I know that there is a Nintendo made USB-to-Ethernet converter, and I know that there is at least one other company that makes a USB-to-Ethernet converter specifically for the Wii, but can any old run-of-the-mill converter be used? The Nintendo one can only be bought through Nintendo's online store, and the other company's converter costs something like $30, which is much more expensive then some other, non-Wii specific converters. I think any USB-to-Ethernet converter should work, but I would like to make sure before buying one.

I don't know if you can or not but your better off getting one made by Nintendo or the other company you mention. If you have a wireless connection at home, you don't have to buy the converter. :)
