Not a country, but a region : the Levant AKA the Fertile Crescent : Israel, Jordan, Lebanon, the Palestinian Territories, the Sinai Peninsula, South Anatolia, Syria.
Just for the Neolithic Revolution : the invention of agriculture and the first cities. Plus all that Religious History, of course.
And there is so _much_ History :
"Anatomically modern Homo sapiens are demonstrated at the area of Mount Carmel, during the Middle Paleolithic dating from about c.90,000 BCE. This move out of Africa seems to have been unsuccessful and by c.60,000 BCE in Israel, especially at Amud, classic Neanderthal groups seem to have profitted from the worsening climate to have replaced homo sapiens, who seem to have been confined once more to Africa."
"A second move out of Africa is demonstrated by the Boker Tachtit Upper Paleolithic culture, from 52-50,000 BCE, with humans at Ksar Akil XXV level being modern humans. This cultures bear close resemblance to the Badoshan Aurignacian culture of Iran, and the later Sebilian I Egyptian culture of c.50,000. Stephen Oppenheimer suggests that this reflects a movement of modern human (Caucasian?) groups back into North Africa, at this time."
"It would appear this sets the date by which Homo sapien upper Paleolithic cultures begin replacing Neanderthal Levalo-Mousterian, and by c.40,000 Palestine was occupied by the Levanto-Aurignacian Ahmarian culture, lasting from 39-24,000 BCE. This culture was quite successful spreading as the Antellian (late Aurignacian) culture, as far as Southern Anatolia, with the Atlitan culture." ("History of the Levant", Wikipedia)

Syria.
Syria has one of the richest and most veried histories on earth, as well as Damascus, the oldest city on earth. Syria has seen Greek, Roman, Persian, Arabian, Egyptian, Hittite, Assyrian, Phonecian, French, and Turkish occupation. ALL of these nations have left monuments and buildings in Syria and there is at least one from every nation still standing in nearly perfect condition. Such sights would include the Dead Cities (Roman), Saladin's tomb (Arab), the Damascus Citadel (Byzantine), and the recently discovered necropolis (Egyptian).

Italy. You have the Roman Empire, the Greek colonies, the Etruscans, the Gauls, the Papal States (Vatican), the Renaissance, the Unification, the Fascist government, and the present. Its been ruled over God knows how many different empires and cultures, all of which have created modern Italy.

Mexico because of the Inca, Maya, the pyramids,
USA because of the Revolution, Masonic Lodges, the fact that lots of politicains are Masons (20 Presidents), the Gold Rush, California and Alaska, all of the wars, and eveything else.

I like the United States history, at the present moment of study. I'm focused on the Fort Niagara of the past and from there I feel i can better understand many concepts about our heritage and the whys of our wars. Interesting reading for now.

France: so many invasions, so many contradictions (French revolution: monarchy, then revolution, then back to monarchy, and then...empire!), country of "Enlightment" with its philosophes: Rousseau, Descartes, Voltaire, Pascal, etc..., WW1 and WW2, country of arts and culture, extremely rich in history and splendid monuments, different styles in architecture, interesting relationships with its neighbours, (co-foundator of the European Union with Germany after WW2), beautiful country and land of so many different styles of ruling...
