You don't use theories as proof that psychology is a science.
You use methodology instead. From that methodology you can make observations and predictions, and analyse your results and create a theory out of it based on thoughts and sensations.

To answer this question yourself:
What method would you use to reliably and validly record people's thoughts & sensations?
(surveys, interviews, measuring brain activity through machines?)

Would you prefer to record results in measurable numbers that can be applied to statistical methods, or analyse interviews and find common themes and ideas in them?

How can you ensure that the results from your methodology can be applied to everyone in the whole world, all cultures, all ages, all genders, healthy and not-healthy?

Psychology is more philosphy and guess work than science. Most mental health diagnoses are in fact theories as to what a psychologist believes and what the patient tells them or is observed doing.

I don't know what you are asking. Theories cannot prove anything, they generate hypotheses that allow us to test a theory's ability to explain phenomena.
