Depends...on a piece of equipment with buttons, I read the labels on them.
On a person, well, try not to be that manipulative but generally to push good buttons I say some small complimentary things or something funny and see the reaction. If it is a good response, I keep it up.

Trial and error. You know you've pressed the right ones when you hear a "phwoarrrrrr" and not an "aaaaaaargh"
