anyone knows why starwars is start from the 3 episode?

it was done because Lucas at the time had bigger plans for the story of Anakin Skywalker and didnt have the technology at the time to make them. So he started with what he considered a easier movie to make.

originally after the success of Star Wars
George was going to make it a 12 movie series with one having the '24 hours' of Star Wars at your local theater for a marathon

but he got bogged down - and that has gone by the wayside

It actually begins with episode 4.
The episodes I, II, and III are prequels to the original trilogy, which George Lucas numbered IV, V, and VI.

george lucas began with episode 4, it was the easiest chapter to make back in the 70s.
