The El Cortez has 6 tables of 3/2 single deck BJ. The Four Queens has 2, and the Western has one(I don't recommend playing at the Western!!)

You will find other single deck games in LV but they are rip off games that pay 6/5 for a BJ.

If you're interested in any other low limit games(Craps/Pai Gow Poker/Single Zero Roulette) or positive expectation video poker let me know by "adding details" to your Q or shoot me an e-mail through YA. >I'm heading to LV for 30 days here in a few so I have all of my notes up to date<

I do know of two other casinos that have single deck, low limit, 3/2 blackjack but both usually only have one table and they are almost always full. Slots-A-Fun has one table all the time. Ellis Island has a single deck game, Mon/Fri during the day.
