What would you plan.
Monday to Friday 2 hours per a day
Saterday 5 hours

Here's some suggestions:

1) informational sessions (in the form of panel discussions, booths, and/or demonstrations (such as Braille, ASL, etc.).

Topics could include legal rights under the ADA, problems with specialeducation, disability and aging, how to reduce barriers in buildings, etc.

>Screening of documentaries/movies. Many organizations (e.g. the American Foundation for the Blind) have excellant videos. I fyou do opt for movies--ones like "Children of a Lesser God" are good. Not stereotyping trash like "Forest Gump" or "Million Dollar Baby."

Put the focus on the people with disabilities. Havve them--as much as you can recruit them--serve as volunteers, speakers, etc. What people with disabilities DON'T need is more people speaking for them--it's long past time we are allowed to speak for ourselves.

Pair up two people - one with and one without a disability and have them negotiate getting everything they want to do for those two hours done. Have the person without the disability mimic the limitations of the others person's disability as much as possible. Use a chair, cane, wear dark glasses, whatever. Do not think that trying to act disabled on your own will work - the able-bodied person has to see how the person disabled 24/7 negotiates their life.

On Saturday have a time to discuss what was experienced in small groups separated into able-bodied and disabled. Then break for lunch. After lunch let the teams present what they learned from each other.

I wouldn't plan anything, disabled and nondisabled co exist with each other and do have contact with one another. Not all disabled people are institutionalized or sheltered to a severe degree.
