How come it's so hard to find it and capture it on film

They live at incredible depths and were not exactly sure just where so its searching the entire ocean for something thats not all that big. yes its a giant squid but on the oceanic scale, its tiny. And getting equipment down there is really expensive

It mainly has to do with the fact that they live at great depths that it is hard to film at.

The reason that most of the footage is either of dead or dying squids is because many times they will surface after death or in the process of dying they have trouble staying down. You will see this also with other deep sea fish and sharks and the like. Near impossible to film at the depth they live but much more simple to film as they rise to the surface to die.

Because they live so deep. On the Discovery channel a man worked hard to finally achieve the feet and they do have a few pictures. If you look around on Discovery's website you can find them.
