mostly because they do not know what else to say.
although death is something that is fundamental to human's existence, we do not know much about it beside that it happens.
so we tell ourselves that it is ok
and maybe it is

Well, you don't want to say "Oh, it's great" if someone died, because that's like sadism, but you usually don't say "Oh, it's bad" because it's just too general and it sounds as though as you give pity, and there's actually a lot of people who don't like pity.
Saying that things will be OK is general as well, but it's like in between. You just have to let them alone at that, because they probably want to be alone, but you give this statement to show that things will be alright. You can't promise that things are going to be great or things are going to bad, but just alright...maybe depending on how positive or negative the person is. It's OK in the end when you think you moved on after grieving for the deceased, and that you're ready to go back to laughing and enjoying life again. You have your scars, but you have your memories of them.

They're just trying to calm the person who is upset - reminding them that after a while, it will all be okay, alright, back to normal, fine, etc...
If someone you cared about died or was badly hurt, would it help you if other's said, "oh jeez, that sucks so much. wow. I'll bet you're going to be sad and hurting deeply for a long long time. too bad for you. Imagine how much that must have hurt. I'm so glad it was your friend and not mine."
People are just trying to be soothing - its like a tradition in some cultures to say "its okay". Some cultures do not do this, however.

It's just a term of support in a time when one is going through their grief. A term used in support when agreeing. Some times people don't know what to say so OK seems appropriate. It that OK?

Oh we don't know what the hell to say. We once saw someone on tv say it was ok and it seems like the appropriate thing to say at the moment so that's what we say. We all know it isn't ok....and may never be ok again. But what else do you say? DAAAAAAAAMMMMMMMMM that sucks for you! You gotta do the best you can to be compassionate and comforting...even if you don't quite know what to say.

I never say that to people because it's not 'ok'. I also never say 'I know how you feel' unless I really do. Some people just don't think about the words that come out of their mouth.

Pacifying a victim of a sudden accident is a normal anxiety reaction and an attempt to maintain clear 'rational' or objective thought or conscience. The expression 'it's O'K',' is not the only, shall we name them, anti-stressor expression. 'you'll be ok' or 'it's alright' or 'be strong now' are other examples.

Because it is not possible to remove or destroy energy. It can be changed and otherwise manipulated but never removed from existence. There for as we all understand that we and everything else is energy. then why would anything not be OK?

Despite its hypocrisy, we say its okay because we like to remind those who are aggrieved of life's ironic fullness. Life does not end here. We encourage them to cope and to live with hope. C'est la vie.
I hope this helps. God Bless!
