Because I really enjoy the elvish singing, my favorite song would have to be "The End Of All Things".

As for the orchestral pieces, I like "The Ring Goes South" best, but as for actual songs I prefer the three end credit songs: "Into the West", "May It Be", and "Gollum's Song" in that order.
