This sounds like a variation on the old question, "What's beyond the edge of the universe?"
The truth is, that question is completely irrelevant. Asking what's beyond the edge of the universe is like asking what came before time, or what comes after time. Stephen Hawking once explained it as being similar to asking what's north of the North Pole. Nothing--the North Pole is as north as you can possibly get, so you cannot go north of it.
Similarly, you cannot go beyond the "edge" of the universe, because there is no edge. Think of it like a balloon that's constantly expanding.

There is no farthest galaxy because the universe is homogeneous. This means that it is uniformly filled with galaxies. The light beam will keep encountering galaxies for ever, as far out as it goes.

Light passing beyond the fartherest galaxy would continue traveling until it struck something solid or massive enough to halt its passage. Variations, shapes, different answers???

Theoretically it should go on forever. Because it travels at the speed of light time does not really affect it so there's no change in the photons

I think we would have to assume that it would continue on, until another force acted upon it. And since we dont have the slightest idea about space at that distance, that's all we can say.
