The hotel buffets and coffee shops have expensive meals these days, not like years ago. So the best thing to do is eat in "name brand" places or the hotel food courts. Most hotels have small restaurants for lunch and dinner or you can go to places like the Cheesecake Factory in Caesars, Outback Steakhouse in the Casino Royal Hotel and also across from the RIO, Planet Hollywood in Caesars, and Martguerita's in the Flamingo hotel. Instead of hotel buffets for breakfast just do McDonalds (there area several on the strip) or Denny's (in the Casino Royal. For a buffet dinner that's not as expensive try the Imperial Palace or the Gold Coast Hotels. Also the Circus Circus and the hotels on Freemont St have less expensive buffets.

First, have the amount of money you are willing to loose decided before you leave.
Second, if you wait to get reservations for the shows until you get there then it is too late.
To save money I suggest the stand up acts are best for the given amount of money.
I further suggest that you eat at the buffet. If you eat well there then you will not be hungry for the rest of the day. If you are going to gamble, then get a comp card. Use the points to get a discount at the buffet.
Check out something like Vegas.com. The price is usually better then the casino's personal web site.
For economy, the best places tend to be Circus Circus, Stratosphere and the Orleans. The Orleans has a movie theater.
If you need some of the smaller off the strip places, Go to Yahoo travel/Las Vegas.

There are chain restaurants in many of the hotels (Paris, Aladdin, Hilton, NewYorkNewYork..etc) However, Vegas is home of the cheap buffets. Up and down the strip there are more restaurants than you can count. Food is generally cheap because they want you to spend your money in the casino. Hit up the Double Down Saloon for some cheap drinks.

The buffet at the Palms. $9.99 for lunch - all you can eat, and it ROCKED. (I think dinner was $11 or something.) Chinese food, BBQ, pasta, meat, salad, desserts to die for!

Otherwise, the food court at NYNY offers something for everyone at reasonable rates. My mom and I had burgers, fries, onion rings, and sodas for under $20.
