We have a new lawn and have been watering it 10-15 minutes up until recently twice a day, now just once around 7AM. What is causing those unsightly sprouts to spring up? Gross!

Specialists recommend a heavy watering (half an hour or more) twice weekly. 10 minutes will only wet the surface of your lawn and you need to get down to the roots. Also, water in early morning before sunup if possible. When you water in sunlight, most of the water evaporates before it gets down to the roots. Mushrooms have very shallow roots, so you're feeding them instead of your grass.

Mushrooms are a fungus. Sounds bad doesn't it? Actually the presents of mushrooms in your lawn means there is an abundance of nutrients in the soil. That's good. Over watering is not. I don't know your area, but here in Texas it has been raining quite a bit, but when it stops, it stops.
Fungus needs alot of moisture, so turn the water off for a few days. If the grass is rooted well, this will cause it no harm, but the mushrooms will disappear.

It's growth that is rotting below the grass. ( and yes, this is a good thing... means nutrients in the ground )
Since you didn't specify the type,I'm answering for the most common I know of.
Usually though, any type of mushroom is generally attracted to rotting material.
