stephen king's theory is that we are just "feeding the alligators of our minds". in other words we are just watching these creepy sadistic things as a sort of release so that we don't go out and act on certain impulses. instead we see these impulses released for us in the theatres.

Well, I'm one of those people and I couldn't tell you for sure why. All I know is that I have certain sadistic tendencies and I have a high level of aggression. It's not something I can control. I'm simply an impulsive person and I like those movies for 2 reasons:
1. They help me relax. Yes, if you were in my mind all the time, and if you went through the anger I go through daily, those kind of movies would help disconnecting you from the surroundings as well. They work for violent or sadistic people because when they see or connect to something that has the same level of aggressiveness as they do, it calms them down in a way. It's a complex psychological process that goes beyond simple preferences.
2. I love the thrill.

Because, it's entertaining them (the people who likes gross, sadistic scenes of torture- like Hostel, Texas Chainsaw, etc.)

That's a really good question that makes ya think...
I like those movies, but I have to turn my head away during most of the grosser scenes. Hostel and the Saw movies were the hardest to watch. I think that some of us like them because we're fascinated with the ideas that people come up with. However, I think that others might watch them to get a kind of thrill out of the idea of people suffering in the worst ways.
Who can say for sure? I like them because they scare the crap out of me and I guess that's a kind of thrill, too.

Mostly it is the fear we are after, it`s almost like a drug(Coffey, cigarettes, pills, alcohol etc). The rush of being scared as hell and jump in the chair is quite cool! I don`t think there is many if any, who dwells with the films any deeper than the pure fright and horror there and then. Anyway, peace and love from Norway

I like watching movies like that and I can only speak for myself, but I don't think that I enjoy that kind of stuff and want to do it myself, but I think of it as it can be real. I enjoy all types of movies from love to comedy to misery to torture. I love it all, I've seen it all and I think it's great the imagination that one can have to create a movie.

What made ancient Romans like to watch people fight to the death in the arena? What made public execution during the dark ages a town "event" Why do we watch reality TV where people are cruel to eachother and backstab, lie, and cheat?

It's different from the usual movies. People tend to seek for something thrilling, unique, suspenseful

They play up to the dark side every human has. Who hasn't had fleeting images in their head of maiming/killing someone? But it's not acceptable in society, so maybe it helps us to indulge those fantasies without repercussions.
