You're talking about the neuroplasticity of the brain - the fact that it can change. With your consciousness and clear intention, you can rewire your brain. You need to be clear about what's happening in your brain that doesn't serve you, and what you want to replace it. Then you have to hold that intent, and practice ignoring the old signal and reinforcing the new. Over time, it changes the structure of your brain.

Definitely, we are growing and learning, thus rewiring our brains, constantly. You can even do it deliberately, by choosing a behavior to start or end. It is easiest as a child, but it's never too late to learn something.

One place to study would be the approach used in 12-step programs. they seem to be successful in helping people re-wire their brains, to change deeply-ingrained habits and be4havior patterns.
