I've personally always loved the story of John Henry, the symbol of man's determination and willpower. And of course, Superman.

Being another Texan I must say Pecos Bill. However, I think well of Paul Bunyan because one time he came down to Texas and had a Beer bust with Pecos Bill. Bill was escorting Paul home when they had to stop for a pit stop. They stopped beside the rode in front of a little hamburger joint to let loose. At that moment one of our famous Blue Northers came sweeping through the area and almost everything got froze solid. They jumped on their horse and ox and took off. The next morning the Scotsman that owned the hamburger joint had more business than he could handle because of all the people stopping to look. He went into the franchise business and the golden arches of Pecos Bill and Paul Bunyan are represented around the world.

Native American or First Nation People. There stories are interesting and have many logical reasoning as to why things are the way they are.

As an example the Crow Tribal Nation knew about the Europeans coming long before they did so the Ancestors made plans to work with and help them instead of resistance because of wanting the Crow Tribal Nation to survive. They did.
