Just keep putting the point of the pencil on the glass and moving it around slowly, it will follow without any real teaching.

Befor I got wise and bought a filtered tank, my betta would swim into the glass when it was time to change the water it its bowl. now he will eat out of my hand, and even jump a little for a piece of bloodworm. it just takes patience, first get him so he will eat out of your fingers, then gradually as time goes by feed him a little higher out of the water, until finally he will jump quite high! I find bloodworm or maggots work the best. hope this helps

They are aggressive fish, you may be able to teach it to fight. Not really a trick but it'd be cool to watch and you can challenge your friends to fish fights and make bets on it and stuff. Kinda like Michael Vick but I think fish fighting is legal.
