It is the name of one of the main characters in the Novel Mobey Dick by Herman Melville. Mr. Starbuck was first mate to Captain Ahab. He was a deeply religious man, and was torn between the morality of obeying orders versus his concern for the crew.
While Herman Melville never actually went whaling from the port of Nantucket on the North Shore of Massachusetts in Essex county, he had heard the true story of the white whale that attacked the ship Essex off the coast of Chile.
It formed the basis for his story called Moby Dick.
the novel begins, "Call me Ishmael..."
